Patrick Cabaluna, Sous Chef, San Mateo

A 2009 graduate of Le Cordon Bleu College of Culinary Arts, Patrick is one of the youngest sous chefs to join the Pacific Catch team. Raised in California’s Central Valley, Patrick began his career working for popular Sacramento restaurateurs Ron and Terri Gilliland (Lucky Dog Ranch, Roxy Restaurant & Bar, and Lucca) under Chef Daniel Origel. Additionally, Patrick worked numerous catering and off-site events, including events for the California State Fair, Disney’s Tron and hip-hop artist Ja Rule.

Patrick’s hobbies include working on his car, a blue Subaru WRX, playing the drums, and, of course, cooking. Inspired by memories of watching his mother and grandmother cook, Patrick enjoys figuring out innovative ways to use ingredients, and keeping up with current food trends.
